It’s Spring and coming up on Easter, that means fresh berries are abundant.
If you are looking for a great recipe to use with fresh berries that’s delicious and oh so satisfying, I’ve come up with the perfect thing for you.
I found myself with extra blueberries, strawberries, and blackberries today, so I decided to throw together a cobbler.
It’s quick and easy and your house will smell divine.
Simple Steps. Simple Ingredients. And not a lot of time.
What more could you ask for?!?!
You can also sub whatever fresh fruit you have on hand or change out the berries and it will all work out the same.
1-1.5 cups fresh (or frozen) blueberries
1-1.5 cups fresh (or frozen) blackberries
1-1.5 cups fresh (or frozen) strawberries
1 packet on Instant Apple Cider mix
2/3 cup + 4 TB of sugar or sugar substitute ( I use regular sugar)
2 cups of Bisquick
1 cup milk
2 TB lemon juice
1 tsp salt
2 TB butter, cut into small squares
Preheat oven to 350 degrees.
Mix berries, Apple Cider packet, and 2/3 cup of sugar together in large bowl. Make sure to coat all berries evenly.
Pour berry/sugar mixture into a 9×13 Pyrex pan.
Mix Bisquick, 4TB sugar, salt, milk, and lemon juice in large bowl.
Once mixture is combined, spoon onto berry mixture.
Drop small pieces of butter over pan randomly.
Bake for 30-40 minutes.
Allow to cool 15 minutes before cutting into.
**Serve with Whipped Cream or Vanilla Ice cream.
