White Chocolate Chip Pumpkin Cookies

It’s a gorgeous day in South Louisiana. It’s not a bazillion degrees outside, the humidity is down, and everyone is putting Halloween decorations out.
It’s a mommy and kiddos day, so I’m taking a break from writing and editing (for now) and the kids and I have been doing one of our favorite pastimes… Baking!


My house smells divine and even though my kitchen is a wreck, we’re all giggling and laughing.
I’m enjoying a pumpkin spice latte, from McDonald’s. And it’s good! And cheap! Under $3 for a LARGE!
My kids are drinking chocolate milk, and tearing up these cookies.
They appear to be “Kid Approved”!

Ingredients:
1.5 cups all purpose flour
1 TB pumpkin pie spice
1/4 tsp baking soda
1/2 cup room temperature unsalted butter (I used salted though)
1 cup packed brown sugar
2/3 cup packed pumpkin purée
1 egg
1/4 cup of applesauce
2 tsp vanilla extract
1 & 1/3 cups white chocolate chips

Directions:
In small bowl, whisk flour, pumpkin pie spice, and baking soda.
In medium bowl, cream butter and sugar. Use electric mixer.
Add pumpkin purée and beat.
Add in egg, applesauce, and vanilla. Beating well.
Add flour gradually, stirring until combined. Add chocolate chips.
Stir well.
Drop by rounded tablespoons for small cookies (about 2 dz) or large cookie scoop (1 dz).
Bake at 300 for 20-25 minutes. Allow to cool before removing.
